  • 1 ripe avocado
  • 2 eggs

  • A pinch of chilli flakes (optional, for a bit of heat)
  • A squeeze of lemon juice
  • Salt and pepper to taste
  • Fresh coriander or parsley, chopped (for garnish, optional)

Method

  1. Toast the bread:
    Toast the slices of whole wheat bread until they’re golden and crispy. You can use a toaster or simply toast them in a pan with a little butter or olive oil for extra flavour.
  2. Prepare the avocado:
    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until it’s smooth but still slightly chunky. Add a squeeze of lemon juice, a pinch of salt, and a sprinkle of chilli flakes (if using). Mix well.
  3. Cook the eggs:
