Fruit Salad with Chia Seeds Recipe

Ingredients (Serves 4)
- For the fruit salad:
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup pineapple chunks
- 1 cup mango chunks
- 1 kiwi, peeled and sliced
- 1 banana, sliced
- A handful of pomegranate seeds (optional, but adds a lovely crunch)
- For the topping:
- 2 tbsp chia seeds
- A handful of chopped nuts (almonds, walnuts, or pistachios work beautifully)
- A drizzle of honey or maple syrup (optional, for extra sweetness)
- A squeeze of lime or lemon juice (optional, for a bit of zing)
Method
- Prep the fruits:
Wash and chop all the fruits into bite-sized pieces. Try to keep them roughly the same size so they’re easy to eat. - Assemble the salad:
In a large bowl, combine the strawberries, blueberries, pineapple, mango, kiwi, banana, and pomegranate seeds (if using). Gently toss everything together. - Add the toppings:
Sprinkle the chia seeds and chopped nuts over the fruit salad. If you like, drizzle a little honey or maple syrup over the top for extra sweetness, and add a squeeze of lime or lemon juice for a bit of zing. - Serve and enjoy:
Transfer the fruit salad to a serving dish and enjoy it as a light Iftar treat or a refreshing dessert. It’s perfect on its own or paired with a dollop of yoghurt or a scoop of ice cream.
Why This Recipe is Perfect for Iftar
- Light yet satisfying: The fruits provide natural sugars and fibre, keeping you full without feeling heavy.
- Packed with nutrients: Colourful fruits, healthy fats from the nuts, and omega-3s from the chia seeds make this salad a nutritional powerhouse.
- Quick and easy: It takes just 15 minutes to prepare, making it ideal for busy mums like me.
Tips and Tricks
- Switch up the fruits: Use whatever you have on hand – grapes, oranges, or even a bit of melon work beautifully.
- Make it ahead: You can prep the fruits in advance and keep them in the fridge until you’re ready to serve. Just add the chia seeds and nuts right before eating to keep them crunchy.
- Kid-friendly: Let the kids help with chopping the fruits or sprinkling the toppings – it’s a fun way to get them involved in the kitchen.
A Little Note from Me
This fruit salad with chia seeds will be something you can make over and over again. Make extra and keep in the fridge for later…if you even get a chance to have seconds looool.
Much love
