Grilled Halloumi & Tomato Salad Recipe

Ingredients (Serves 4)

  • For the salad:
  • 200g halloumi, sliced
  • 2 tbsp olive oil (for grilling)
  • 2 cups cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cucumber, sliced into half-moons
  • 1/2 red onion, thinly sliced
  • A handful of fresh basil or mint leaves
  • For the dressing:
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • 1 tsp honey or maple syrup
  • 1 tsp Dijon mustard (optional)
  • Salt and pepper to taste

Method

  1. Grill the halloumi:
Heat a grill pan or non-stick frying pan over medium heat. Brush the halloumi slices with a little olive oil and grill for 2-3 minutes on each side until golden and crispy. Set aside.
  2. Prep the veggies:
While the halloumi is grilling, halve the cherry tomatoes, slice the avocado and cucumber, and thinly slice the red onion.
  3. Make the dressing:
In a small bowl, whisk together the lemon juice, olive oil, honey (or maple syrup), Dijon mustard (if using), salt, and pepper. Taste and adjust the seasoning if needed.
  4. Assemble the salad:
In a large serving bowl, combine the cherry tomatoes, avocado, cucumber, and red onion. Tear the fresh basil or mint leaves and scatter them over the top.
  5. Add the halloumi:
Arrange the grilled halloumi slices on top of the salad.
  6. Drizzle and serve:
Drizzle the lemon dressing over the salad and serve immediately. It’s perfect as a light Iftar meal or a refreshing side dish.
