This salad is a fantastic way to break your fast with something light yet satisfying. It’s packed with juicy tomatoes, creamy avocado, and golden, crispy halloumi that’s grilled to perfection. Plus, it’s drizzled with a zesty lemon dressing that ties it all together.
Grilled Halloumi & Tomato Salad Recipe

Ingredients (Serves 4)
- For the salad:
- 200g halloumi, sliced
- 2 tbsp olive oil (for grilling)
- 2 cups cherry tomatoes, halved
- 1 avocado, sliced
- 1 cucumber, sliced into half-moons
- 1/2 red onion, thinly sliced
- A handful of fresh basil or mint leaves
- For the dressing:
- Juice of 1 lemon
- 3 tbsp olive oil
- 1 tsp honey or maple syrup
- 1 tsp Dijon mustard (optional)
- Salt and pepper to taste
Method
- Grill the halloumi:
Heat a grill pan or non-stick frying pan over medium heat. Brush the halloumi slices with a little olive oil and grill for 2-3 minutes on each side until golden and crispy. Set aside. - Prep the veggies:
While the halloumi is grilling, halve the cherry tomatoes, slice the avocado and cucumber, and thinly slice the red onion. - Make the dressing:
In a small bowl, whisk together the lemon juice, olive oil, honey (or maple syrup), Dijon mustard (if using), salt, and pepper. Taste and adjust the seasoning if needed. - Assemble the salad:
In a large serving bowl, combine the cherry tomatoes, avocado, cucumber, and red onion. Tear the fresh basil or mint leaves and scatter them over the top. - Add the halloumi:
Arrange the grilled halloumi slices on top of the salad. - Drizzle and serve:
Drizzle the lemon dressing over the salad and serve immediately. It’s perfect as a light Iftar meal or a refreshing side dish.
