Lemon Garlic Shrimp with Brown Rice…A Zesty, Healthy Iftar Feast!

Assalamu Alaikum, my lovely readers! Ramadan Mubarak to you all! It’s Shahena…Today, I’m sharing my Lemon Garlic Shrimp with Brown Rice…a delicious, healthy and flavourful dish that’s sure to impress the whole family.

Succulent shrimp, zesty lemon and fragrant garlic come together to create a dish that’s bursting with flavour. Paired with nutty brown rice, it’s a balanced and nourishing meal that’s perfect for breaking your fast. Even my little ones love it (and that’s a win in my book!). This lemon garlic shrimp is a must-try.

Lemon Garlic Shrimp with Brown Rice Recipe

Ingredients (Serves 4)

  • For the shrimp:
  • 400g raw shrimp (prawns), peeled and deveined
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 tsp paprika
  • 1/2 tsp chilli flakes (optional, for a bit of heat)
  • Salt and pepper to taste
  • A handful of fresh parsley, chopped (for garnish)
  • For the brown rice:
  • 1 cup brown rice, rinsed
  • 2 cups water or vegetable stock
  • 1 tbsp olive oil or butter
  • Salt to taste

Method

  1. Cook the brown rice:
    In a medium saucepan, heat the olive oil or butter over medium heat. Add the rinsed brown rice and stir for 1-2 minutes until lightly toasted. Pour in the water or vegetable stock, add a pinch of salt, and bring to a boil. Reduce the heat to low, cover, and simmer for 25-30 minutes until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
  2. Prep the shrimp:
    While the rice is cooking, pat the shrimp dry with a kitchen towel and season with salt, pepper, and paprika.
  3. Cook the shrimp:
    Heat the olive oil in a large frying pan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the shrimp to the pan and cook for 2-3 minutes on each side until pink and opaque. Stir in the lemon zest, lemon juice, and chilli flakes (if using).
  4. Serve and enjoy:
    Spoon the cooked brown rice onto a serving platter and top with the lemon garlic shrimp. Garnish with fresh parsley and serve immediately.
