Mouth watering Watermelon and Feta Salad Recipe for Iftar

Heyy folks! Look what I have for you today! As we continue through Ramadan, I’m always on the lookout for fresh, light, and easy to make recipes to enjoy during Iftar. Today, I’m sharing a dish that’s become a real summer favourite…Watermelon and Feta Salad.

This salad is not only incredibly refreshing but also bursting with sweet, salty, and tangy flavours…perfect for breaking your fast on a warm evening. The combination of juicy watermelon, creamy feta, and zesty dressing is simply irresistible. Plus, it’s a fantastic way to get the kids to enjoy something healthy (mine love the bright colours and fun textures!).

So, let’s get chopping!

Watermelon and Feta Salad

Serves: 4-6
Prep time: 10 minutes

Ingredients

  • ½ medium watermelon, cut into bite-sized cubes
  • 200g feta cheese, crumbled
  • 1 small red onion, thinly sliced
  • A handful of fresh mint leaves, roughly chopped
  • A handful of fresh basil leaves, roughly chopped
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lime
  • 1 tbsp balsamic glaze (optional, but adds a lovely sweetness)
  • Salt and pepper to taste
  • A handful of pitted black olives (optional, for extra flavour)

Method

  1. Prepare the watermelon: Cut the watermelon into bite-sized cubes and place them in a large serving bowl.
  2. Add the toppings: Scatter the crumbled feta cheese, sliced red onion, and fresh mint and basil leaves over the watermelon. If you’re using olives, add them now too.
  3. Make the dressing: In a small bowl, whisk together the olive oil, lime juice, and a pinch of salt and pepper. Drizzle this over the salad, then finish with a drizzle of balsamic glaze for a touch of sweetness.
  4. Toss gently: Give the salad a very gentle toss to combine everything – you don’t want to crush the watermelon!
  5. Serve and enjoy: Transfer the salad to a serving platter or serve it straight from the bowl. It’s best enjoyed fresh, so dig in straight away!

Tips from MOI!

  • If you’re making this salad ahead of time, keep the dressing separate and add it just before serving to keep the watermelon nice and crisp.
  • Feel free to customise this salad with whatever you have on hand. Cucumber, avocado, or even a handful of rocket would work beautifully.
  • For a vegan version, swap the feta for a plant-based alternative or simply leave it out – the salad will still be delicious!
