Assalamu Alaikum, brothers and sisters! Ramadan Mubarak to you all! Today, I’m sharing my Mushroom & Spinach Omelette recipe…a delicious, healthy and flavourful dish that’s sure to impress the whole family.
It’s packed with earthy mushrooms, nutrient rich spinach and fluffy eggs that are cooked to perfection. Most Iftars tend to be oil rich and unhealthy (yet tasty) options but we all need to take a break and healthily at times.
Mushroom & Spinach Omelette Recipe

Ingredients (Serves 2)
- 4 large eggs
- 1 cup mushrooms, sliced
- 1 cup fresh spinach leaves
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 tbsp olive oil or butter
- 2 tbsp milk (optional, for fluffier eggs)
- Salt and pepper to taste
- A handful of grated cheese (optional, but adds a lovely gooeyness)
- Fresh parsley or coriander, chopped (for garnish, optional)
Method
- Prep the veggies:
Heat the olive oil or butter in a non-stick frying pan over medium heat. Sauté the onion and garlic for 2-3 minutes until soft and fragrant. Add the sliced mushrooms and cook for another 3-4 minutes until they’re golden and tender. Toss in the spinach leaves and cook for 1-2 minutes until wilted. Season with a pinch of salt and pepper, then remove the veggie mixture from the pan and set aside. - Whisk the eggs:
In a bowl, whisk the eggs with a splash of milk (if using) and a pinch of salt and pepper until well combined. - Cook the omelette:
Reheat the frying pan over medium heat and add a little more oil or butter if needed. Pour in the whisked eggs and let them cook for 1-2 minutes until the edges start to set. Spoon the mushroom and spinach mixture evenly over one half of the omelette. Sprinkle with grated cheese if you like. - Fold and serve:
Gently fold the other half of the omelette over the filling and cook for another 1-2 minutes until the eggs are fully set and the cheese is melted (if using). Slide the omelette onto a plate, garnish with fresh parsley or coriander if you like, and serve immediately.
