Cucumber and Mint Yoghurt Dip with Carrot Sticks

Serves: 4-6
Prep time: 10 minutes
Chilling time: 30 minutes (optional, but recommended)

Ingredients

For the dip:

  • 1 cup Greek yoghurt (or plant-based yoghurt for a vegan option)
  • 1 small cucumber, grated and squeezed to remove excess water
  • 2 tbsp fresh mint leaves, finely chopped
  • 1 garlic clove, minced (optional, but adds a lovely kick)
  • Juice of ½ lemon
  • 1 tbsp olive oil
  • Salt and pepper to taste

For the carrot sticks:

  • 4-6 medium carrots, peeled and cut into sticks

Method

  1. Prepare the cucumber: Grate the cucumber and place it in a clean tea towel or kitchen paper. Squeeze out as much water as possible – this step is key to keeping your dip nice and thick.
  2. Mix the dip: In a medium bowl, combine the Greek yoghurt, grated cucumber, chopped mint, minced garlic (if using), lemon juice, and olive oil. Season with salt and pepper to taste. Give everything a good stir until well combined.
  3. Chill (optional): For the best flavour, cover the dip and pop it in the fridge for at least 30 minutes to let the flavours meld together. If you’re short on time, you can serve it straight away – it’ll still be delicious!
  4. Prepare the carrot sticks: While the dip is chilling, peel and cut the carrots into sticks. I like to make them about the size of thick chips – perfect for dipping!
  5. Serve and enjoy: Transfer the dip to a serving bowl and place it in the centre of a platter. Arrange the carrot sticks around the bowl for a colourful and inviting presentation.

Tips…

  • If you’re feeling adventurous, add a handful of chopped dill or parsley to the dip for an extra herby kick.
  • This dip is incredibly versatile! Serve it with pitta bread, crackers, or even as a side to grilled meats or kebabs.
  • For a creamier texture, you can add a tablespoon of tahini or a dollop of hummus to the dip.
