Assalamu Alaikum, my lovely readers! Here’s a different one…Roasted Chickpeas!
I like to switch things up and try new things…This one is a keeper!
Roasted Chickpeas Recipe

Ingredients (Serves 4)
- 2 cans chickpeas (400g each), drained and rinsed
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp chilli powder (optional, for a bit of heat)
- Salt and pepper to taste
- A squeeze of lemon juice (optional, for a bit of zing)
Method
- Prep the chickpeas:
Preheat your oven to 200°C (180°C fan). Drain and rinse the chickpeas thoroughly, then pat them dry with a kitchen towel. Removing as much moisture as possible helps them crisp up nicely. - Season the chickpeas:
In a large bowl, toss the chickpeas with olive oil, cumin, paprika, garlic powder, chilli powder (if using), salt, and pepper. Make sure they’re evenly coated with the seasoning. - Roast to perfection:
Spread the chickpeas out in a single layer on a baking tray lined with parchment paper. Roast for 25-30 minutes, shaking the tray halfway through, until the chickpeas are golden and crispy. - Finish with a squeeze of lemon:
Once the chickpeas are out of the oven, give them a squeeze of lemon juice for a bit of zing (if using). Let them cool slightly before serving. - Serve and enjoy:
Transfer the roasted chickpeas to a serving bowl and enjoy them as a snack, a side dish, or a topping for salads and soups.
