Roasted Chickpeas…Iftar Snack!

Assalamu Alaikum, my lovely readers! Here’s a different one…Roasted Chickpeas!

I like to switch things up and try new things…This one is a keeper!

Roasted Chickpeas Recipe

Ingredients (Serves 4)

  • 2 cans chickpeas (400g each), drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp chilli powder (optional, for a bit of heat)
  • Salt and pepper to taste
  • A squeeze of lemon juice (optional, for a bit of zing)

Method

  1. Prep the chickpeas:
    Preheat your oven to 200°C (180°C fan). Drain and rinse the chickpeas thoroughly, then pat them dry with a kitchen towel. Removing as much moisture as possible helps them crisp up nicely.
  2. Season the chickpeas:
    In a large bowl, toss the chickpeas with olive oil, cumin, paprika, garlic powder, chilli powder (if using), salt, and pepper. Make sure they’re evenly coated with the seasoning.
  3. Roast to perfection:
    Spread the chickpeas out in a single layer on a baking tray lined with parchment paper. Roast for 25-30 minutes, shaking the tray halfway through, until the chickpeas are golden and crispy.
  4. Finish with a squeeze of lemon:
    Once the chickpeas are out of the oven, give them a squeeze of lemon juice for a bit of zing (if using). Let them cool slightly before serving.
  5. Serve and enjoy:
    Transfer the roasted chickpeas to a serving bowl and enjoy them as a snack, a side dish, or a topping for salads and soups.
