Yummy Black Bean and Corn Salsa with Baked Tortilla Chips Recipe for Iftar

Yes it’s that time again when you’re constantly searching for healthy Iftar recipes online so I have presented to you the Black Bean and Corn Salsa with Baked Tortilla Chips.

This salsa is not only packed with wholesome ingredients but also bursting with zesty, tangy, and slightly spicy flavours…perfect for refreshing your palate after a long day of fasting. Paired with homemade baked tortilla chips, it’s a snack that’s as satisfying as it is nutritious. Plus, it’s a fantastic way to get the kids involved in the kitchen (mine love helping to mix the salsa and arrange the chips!).

Black Bean and Corn Salsa with Baked Tortilla Chips

Serves: 4-6
Prep time: 15 minutes
Cooking time: 10 minutes

Ingredients

For the salsa:

  • 1 can black beans (about 240g drained weight), rinsed and drained
  • 1 cup sweetcorn (fresh, tinned, or frozen and thawed)
  • 1 red bell pepper, finely diced
  • 1 small red onion, finely diced
  • 1 jalapeño, finely chopped (remove seeds for less heat)
  • 1 large tomato, diced
  • A handful of fresh coriander, chopped
  • Juice of 1 lime
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper to taste

For the baked tortilla chips:

  • 4 small wholemeal or corn tortillas
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt to taste

Method

  1. Make the salsa: In a large bowl, combine the black beans, sweetcorn, red bell pepper, red onion, jalapeño, tomato, and coriander. Drizzle with lime juice and olive oil, then sprinkle with cumin, salt, and pepper. Gently toss everything together until well combined. Taste and adjust the seasoning if needed. Cover and pop it in the fridge to let the flavours meld while you prepare the chips.
  2. Prepare the tortilla chips: Preheat your oven to 180°C (160°C fan). Cut each tortilla into 8 wedges (like a pizza) and arrange them in a single layer on a baking tray. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, and salt. Use your hands to ensure each wedge is evenly coated.
  3. Bake the chips: Bake in the oven for 8-10 minutes, or until the chips are golden and crispy. Keep an eye on them to make sure they don’t burn!
  4. Serve and enjoy: Transfer the salsa to a serving bowl and place it in the centre of a platter. Arrange the baked tortilla chips around the bowl for a fun and inviting presentation.

Want some tips??

  • If you’re short on time, you can use store bought tortilla chips. However, homemade ones are so much tastier and healthier!
  • Feel free to customise the salsa with whatever veggies you have on hand. Avocado, cucumber, or even mango would work beautifully.
  • This salsa is perfect for making ahead of time. Just keep it in the fridge and give it a good stir before serving.
